Sloop Brewing Co. (The Factory)
Sloop Brewing Co. in East Fishkill's former IBM semiconductor plant runs fourteen 120-barrel tanks. Juice Bomb IPA and peanut butter burger stand out.
Adam Watson and Justin Taylor started Sloop in 2011 out of Justin's garage in Poughkeepsie, brewing on the side while both kept day jobs and hauled kegs to farmers markets around Dutchess County. The operation moved into a real production space in 2014, a Dutch post-and-beam barn in Elizaville, before outgrowing that too and taking over 25,000 square feet of East Fishkill's old IBM semiconductor plant in 2018. The Factory now runs fourteen 120-barrel fermentation tanks and three more 120-barrel brites, a scale most Hudson Valley breweries don't get near, alongside the tasting room and restaurant.
The scale shows in the layout: high industrial ceilings, distinct zones for a family dinner crowd or a late-night arcade-and-cornhole crowd, and enough square footage that a packed Saturday still doesn't feel elbow-to-elbow.
