Rushing Duck Brewing in Chester draws on a Hoboken post-Prohibition drinking game, featuring sours and barrel-aged beers on a 20-tap list.
The name comes from Dan Hitchcock's grandfather, who drank in post-Prohibition Hoboken out of a shared pail the regulars called a duck. The card game's loser had to rush the duck back to the bar for refilling, and the phrase stuck around long enough that Dan Hitchcock and Nikki Cavanaugh named their brewery after it when they opened in summer 2012, starting with a 400-square-foot tasting room selling growlers and supplying a handful of local restaurants.
