Suarez Family Brewery in Hudson makes unfiltered Palatine Pils and German lagers from a former lamp factory, with open-air tasting and pretzels only.
In 2016, Dan Suarez and his wife Taylor Cocalis opened the brewery on Route 9 in a building that had been an Oshkosh farm-equipment showroom before becoming the Night Watch lamp factory. After training at Sixpoint in Brooklyn and then at Hill Farmstead in Vermont, Dan had settled on German-inspired pilsners and lagers. The unfiltered Palatine Pils became the beer that built the reputation and remains the top seller; it took about a year to convince New Yorkers to pay craft prices for a pilsner.
We come for the tasting room's instinct for simplicity: open-air, picnic tables, pretzels as the only food (though you can bring your own or order in), no arcade games or screens.
