Hudson's only wood-fired bakery bakes baguettes and croissants in a 17-ton French oven. Le Perche Bakery & Bar sits in a former bank building.
Built as the Hudson City Savings Institution, this 19th-century Warren Street townhouse still carries its original high ceilings, dark wainscoting, coffered plaster, and exposed brick. A two-story carriage house sits behind. When Jeff and Nina Gimmel, who also run Swoon nearby, took over in 2018 with chef John Carr, they rebuilt it completely around a wood-fired French bakery. The centerpiece is a 17-ton circular brick oven, the only one of its kind in Hudson, shipped from France and rebuilt there brick by brick.
