The Hudson Valley's cafes and bakeries are built on tradition. Daniel Leader has been baking Bread Alone's sourdough the same way since 1983, Simone Williams inherited a 30-year-old recipe at All You Knead in Beacon, and Arden Fuchs transformed a 1927 bank into Banque's chocolate shop and cocktail bar in Hudson. Coffee Labs in Tarrytown sources beans directly from farmers and roasts them daily. Scattered across fifteen towns, from Woodstock to Tarrytown and Kingston to Cold Spring, they range from full bakeries to coffee shops, a few blurring into restaurants and cocktail lounges.

All You Knead Bakery in Beacon turns out locally-milled sourdough called a revelation, plus croissants and empanadas that sell out by midday.
