Carolyn Palmieri and Tony Calderone weekended in Hudson for five years before moving up full-time in March 2020. Finding no coffee shop open seven days a week, they started roasting and selling beans at the Hudson Farmers Market that April, then opened the brick-and-mortar space across from 7th Street Park a year later, in April 2021. Palmieri grew up in an Italian family of chefs (her parents ran a restaurant on the Hudson River in New York City for 25 years), and Calderone studied agriculture and works as a cheesemonger on the side. Their backgrounds explain what Hudson Roastery became: a place where coffee, pastry, wine, and cheese all coexist.
