Nora Allen founded Mel on the Lower East Side in September 2020 after a decade of professional baking, building the sourdough program around heritage grains. When that building sold in April 2023, she spent months looking for a new location before landing on 324 Warren Street in Hudson, across from the old opera house, reopening in December and sourcing more heavily from upstate farms and mills.
Everything is naturally leavened and baked the same day: hearth sourdough loaves, focaccia, rye chocolate chip cookies regulars argue are the best in the state, pistachio croissants, cinnamon rolls, and a fruit danish that changes with the season. The James Beard Foundation named her a semifinalist for Outstanding Pastry Chef or Baker in 2023 and a finalist for Outstanding Bakery in 2024.
