Little Loaf started at a farmers-market table years before it had a storefront. Colleen Orlando and Rian Finnegan debuted at the Beacon farmers market in 2022, then built a following through pop-ups at the Poughkeepsie Underwear Factory's shared kitchen and wholesale orders that included selling pastries through Lagusta's Luscious a few blocks over. Orlando left her day job first; Finnegan, who spent years in corporate employer branding after a stint in concert production, followed in February 2023. The Main Street storefront (a former chiropractor's office) opened in January 2025, after close to three years of proving the idea would work outside a tent.
