Signal Fire didn't start in May 2025. That's when it landed at this address. Erin Detrick began baking out of her Cold Spring kitchen in 2018 after a decade in New York theater (new-play development at New Dramatists, then publishing at Playscripts) and stints as a sous chef at She Wolf Bakery, kitchen time in Daniel Boulud's restaurant group, and an apprenticeship with Peter Endriss at Runner and Stone. Liz Rauch, who'd run her own home bakery, Garrison Bread, from 2014 to 2016 and worked day jobs in solar and demand-response software as a data quality engineer, joined her, and the two spent 2018 through 2020 sharing oven space with Sparrowbush Bakery before building their own facility in Peekskill.
