The shop started in 2018 when Timothy Haskell, a theater director who'd built haunted houses and helped launch the Escape the Room chain, spotted an empty storefront on Main Street and figured a cheese shop belonged there. In March 2023, three friends of the original owners, Caroline Sansone, Scott McGibney, and Erin Browning, took it over and kept the same focus: mostly New York State cheese, sourced directly from small producers.
The case rotates through 50 or 60 selections at a time, heavy on names you won't find in a supermarket: Jake's Gouda with its crunch of tyrosine crystals, Hudson Valley Camembert from Old Chatham Sheepherding Company, St Stephen from Four Fat Fowl. Staff pick up orders themselves from producers like Chaseholm Farm and Nettle Meadow, and they'll talk you through any of it if you ask.
