Marbled Meat Shop in Cold Spring buys directly from small New York farms: pasture-raised beef, chicken, pork, and house-made sausage and charcuterie.
Chris and Lisa opened Marbled Meat Shop in 2014, and it's grown into the counter Cold Spring locals drive to when they want to know exactly where their meat came from. The original 500-square-foot shop works only with small family farms in New York and the surrounding states, animals raised on pasture under certified humane standards. The case holds grass-fed beef, pasture-raised chicken and pork, and cuts you don't see everywhere else: goat, heritage-breed sausages, and charcuterie Chris spent years refining.
In 2018 the shop expanded into the larger space next door inside Vera's Marketplace, which is when the lunch counter, prepared foods, and catering started.
