Taste Budd's Cafe in Red Hook combines pastries baked in-house with a fudge case and live music three nights a week that doubles as a town square.
Taste Budd's Cafe sits on Market Street with fair-trade organic coffee, hand-dipped chocolates, and pastries and bread baked fresh in-house, plus panini, soup, and salad if you're after more than a snack. Owner Dan Budd taught pastry arts at the Culinary Institute of America for five and a half years before he started this as a mobile baking business in 2000; he and his wife Julie bought the Market Street building in 2005.
Chocolatier and Pastry Art & Design once named him one of the country's top ten pastry chefs, and the James Beard Foundation nominated him for Pastry Chef of the Year, credentials that show up in the fudge case more than on the menu board. Ask which fudge flavor is moving fastest that day; it's the thing regulars mention before anything else.
