Randi Jimenez, originally from Guerrero, Mexico, worked through New York City kitchens under Daniel Boulud, Eric Ripert, and Christian Delouvrier, with stints at La Mangeoire and Daniel before running the kitchen at New Amsterdam in Rhinebeck. Alain Urbini opened Brigitte on Red Hook's Market Street in 2021 in the space that used to be Mercato and brought Jimenez on not long after. In September 2023, Jimenez bought a 90 percent stake from Urbini, who kept the rest, so the restaurant he'd been cooking for is now mostly his.
The menu stays close to French classics: duck breast, escargot, steak tartare, branzino, foie gras when available.
