Chef-owner Craig Stafford is a CIA graduate with 30-plus years in New York City restaurant kitchens, including a stint at Beacon and a run as executive chef at Giorgio's. His co-owner, Jessica Stingo, runs the front of house. They opened Flatiron in the old Libby McKee's storefront on Route 9 and named it after the Manhattan neighborhood where the two of them worked and met before Red Hook. The room seats about 65 plus a weather-dependent patio, with brick walls that warm the space but also carry sound.
