All You Knead is Simone Williams's bakery, though she didn't start out as the baker. Her business partner, the one who knew the recipes and had the technique in his hands, gave two weeks' notice to retire, and Simone had never baked professionally before that. She spent those two weeks watching him work every loaf and taking notes, and she's run the ovens herself since, with a feel for sourdough built over her years in San Francisco.
The flour here is locally milled from non-GMO, unbleached whole wheat with a high gluten protein level, which gives the bread its hearty, chewy character instead of the light, forgettable kind. The sourdough gets called a revelation by people who've had a lot of sourdough. Beyond bread there are empanadas (vegetable or meat), cheese puffs, pretzels, bagels, savory pot pies, and croissants that are worth the trip on their own.
The shop moved from an old high school building to its current Main Street location years ago. The vibe inside hasn't changed: small and rustic, run by someone who cares about the bread far more than the décor. People drive 20 minutes multiple times a month for a loaf.
Go early for the best selection. The shop opens Wednesday through Friday 10am to 4pm and Saturday 9:30am to 3pm, closing Sunday through Tuesday. The good stuff sells out by midday.
