All You Knead Bakery

All You Knead is Simone Williams's bakery, though she didn't start out as the baker. Her business partner, the one who knew the recipes and had the technique in his hands, gave two weeks' notice to retire, and Simone had never baked professionally before that. She spent those two weeks watching him work every loaf and taking notes, and she's run the ovens herself since, with a feel for sourdough built over her years in San Francisco.

The flour here is locally milled from non-GMO, unbleached whole wheat with a high gluten protein level, which gives the bread its hearty, chewy character instead of the light, forgettable kind.
