Hudson Brewing Company opened in 2015, born from Will Thibeault's years of home brewing and his work installing draft systems at bars across the region. When PJ Birmingham tasted one of his garage experiments, he didn't want to stop. They opened the brewery together, and their first release, an American Pale Ale, still outsells every other beer on the menu a decade later.
