Emma and Paul O'Donnell started as home brewers in Red Hook, confident enough in their own experiments to wonder where they might go. In 2021 they began touring the Hudson Valley for a space; this 1930s warehouse a block off Warren Street became their home. Ground broke in March 2022, and fifteen months of renovation later, the doors opened in July 2023.
