Talbott & Arding in Hudson pairs a cheese counter with a daily-changing kitchen run by chefs who trained at Chez Panisse and Cowgirl Creamery.
Kate Arding and Mona Talbott met more than twenty years ago over dinner at Chez Panisse, where Talbott was cooking and Arding was working with the newly founded Cowgirl Creamery. Arding had already spent years at Neal's Yard Dairy in London before that. Talbott went on to run the kitchen at E.A.T. and to found the Rome Sustainable Food Project. In 2014 they opened a cheese shop on Warren Street, and after six and a half years there, moved into the larger Allen Street space that's home now.
