The Roundhouse occupies a restored 19th-century factory complex straddling Fishkill Creek, and the dining room's floor-to-ceiling windows look straight down onto the falls that used to power the mill. The menu changes seasonally around Hudson Valley farms, wineries, and distilleries, and a 51-room boutique hotel occupies the rest of the building if you want to turn dinner into an overnight. Rooms keep the exposed timber and factory windows of the original structure.
