The Roundhouse in Beacon overlooks Fishkill Creek Falls from inside a restored 19th-century mill, serving seasonal Hudson Valley food and wine.
The Roundhouse occupies a restored 19th-century factory complex straddling Fishkill Creek, and the dining room's floor-to-ceiling windows look straight down onto the falls that used to power the mill. The menu changes seasonally around Hudson Valley farms, wineries, and distilleries, and a 51-room boutique hotel occupies the rest of the building if you want to turn dinner into an overnight. Rooms keep the exposed timber and factory windows of the original structure.
A year-round lounge with a working fireplace handles the colder months, and the patio opens spring through fall for dinner under string lights with an unobstructed view of the falls.
