Kitty's opened across from the Amtrak station on Front Street in September 2020, the work of Ben Fain, an artist and real-estate developer who wanted Hudson to have a counter-service spot it didn't have yet. It expanded into the space next door in 2022, and Nicole LoBue took over the kitchen as executive chef in 2023.
The breakfast sandwich (built to your specs with bacon, egg, and cheese on a bagel or bread of your choice) is the thing people plan train departures around. Rotisserie chicken is the other draw: a half chicken with two sides (roasted potatoes, salad, or rice) runs around $17, a fair price for a bird that comes out this consistently juicy.
