Phos: My Greek-American Kitchen in Catskill stands on a 1905 Greek restaurant's original tiles and serves Hudson Valley ingredients in family recipes.
Phos (light, in Ancient Greek) opened on Catskill's Main Street in June 2025, in a building that already had a Greek restaurant in it a century earlier. Chef Stephanie Skiadas kept the original tiled floor when she gutted the space, since it dated to that first restaurant, built around 1905, which happened to be Greek too. She trained at the CIA and spent six years cooking at Gaskins in Germantown before it closed in 2024, and Phos is her version of Hudson Valley farm-to-table filtered through her own family's Greek cooking.
