Terrapin Restaurant in Rhinebeck occupies a former Baptist church, blending French cooking with Asian, Italian, and Southwestern influences.
Josh Kroner opened the original Terrapin in West Hurley in 1998 and moved it to this 1825 former Baptist church in Rhinebeck in June 2003. He trained at the French Culinary Institute in Manhattan, where he later taught, and worked under Emeril Lagasse and Bobby Flay at Mesa Grill before striking out on his own. An architecture degree from the University of Colorado Boulder shows up in how the dining room is built; under 26-foot ceilings and exposed beams, the space is dramatic without losing the feel of a neighborhood restaurant.
The kitchen blends a classical French base with Asian, Italian, and American Southwest influences.
