Pretty to Think So occupies the historic Starr Institute building on Montgomery Street, and takes its name from the closing line of Hemingway's The Sun Also Rises, a nod to the mood the room is going for more than a literal theme. Chef Mark Margiotta, bar director Madeline Dillon, and general manager Eric Mushel built the restaurant together after meeting while working at The Dutchess, where Margiotta first paired fine dining with an actual farm program. He came up through the Culinary Institute of America, his grandparents' Paradise Restaurant in Verplanck, Brasserie 292 in Poughkeepsie, and two years at Eleven Madison Park under Daniel Humm, whose plant-forward approach still shows up on the plate here.
