Terrapin occupies Rhinebeck's old First Baptist Church, built in 1825, and the room speaks for itself the moment you walk in: soaring ceilings, tall arched windows, the kind of scale a restaurant can't fake. Josh Kroner opened his first Terrapin in West Hurley in 1998 and moved the whole operation into this church in June 2003. He came to cooking sideways, with a degree in architectural engineering from the University of Colorado before training at the French Culinary Institute, where he later taught, and working under Emeril Lagasse and Bobby Flay.
