Via Cassia in Hudson serves fresh-extruded pasta daily under chef Gaetano Arnone, who trained under Tuscan butcher Dario Cecchini.
Via Cassia opened in March 2024 in the Warren Street storefront that had been Ca'Mea for years. Locals still call it "the Ca'Mea building" when they're telling friends where to go. Within its first year, the restaurant was in the running for USA Today's Best New Restaurant.
Chef Gaetano Arnone grew up in Southern California, spent a decade cooking in New York City, then moved to Tuscany, where he trained under the butcher Dario Cecchini before opening his own trattoria.
