Wm. Farmer & Sons in Hudson: gaslit 1830s inn with bone marrow burger, country ham board, and fifteen rooms, rebuilt by chef William Kirby Farmer.
Wm. Farmer & Sons occupies three 1830s buildings on South Front Street that owners William Kirby Farmer and Kristan Keck bought in 2013 and spent roughly two years gutting and rebuilding before reopening in 2015. The name honors three generations of William Farmers: William Joseph (the original), William Kirby (the CIA-trained chef running the kitchen now), and William Wyeth (farmer-in-training). The gaslights and working fireplaces make the barroom feel established, older than its 2015 rebuild.
