Le Canard Enchaine in Kingston has served the same French onion soup and duck confit since 1996 in a Fair Street bistro that reads like Paris.
Jean-Jacques Carquillat opened Le Canard Enchaine in 1996 after training at the Ritz Carlton in Lisbon, Fauchon in Paris, and Le Bernardin in New York, alongside co-owner Jennifer Madden. From its historic Fair Street storefront, they created a proper Parisian bistro. Thirty years in, JJ still works the kitchen and comes out to greet guests.
The menu philosophy is straightforward: stick close to the classics rather than chase what's trendy.
