Chleo in Kingston brings Charles and Hope Mathews' kitchen from Blue Hill at Stone Barns to cook over fire with small plates that change daily.
Charles and Hope Mathews moved from Colorado to Kingston in 2020, after both had worked at Blue Hill at Stone Barns, to build the restaurant they wanted to eat and work in. When Chleo opened in February 2023, they created a scaled-down version of Montreal's Joe Beef: small, unpretentious, and obsessive about the parts of the menu nobody sees, like housemade XO sauce and a butternut-squash-soaked rye.
