Youko Yamamoto spent nearly a decade cooking at Gomen-Kudasai, the cult ramen shop in New Paltz that closed in 2018, before opening Tanma on Broadway in Kingston's Stockade District in December 2021. The name means "time-out" in Japanese (what kids yell mid-game), and she envisioned this seven-seat counter as a break from everyday stress.
Two broths, made from scratch each day, both MSG-free: the Carni miso for meat eaters, balanced and clean, built on organic, locally sourced vegetables with housemade chashu and gyoza; and the Herbi, a vegan bowl that draws richness from tapioca pearls and coconut cream. The gyoza filling carries her father's recipe, brought with him from China before World War II.
