The Blue Pig has occupied a brick storefront on Maple Street since 2010, and Owner Nicole runs the kind of shop where the process is the point. Milk and cream come from Hudson Valley Fresh, a co-op of nine family dairy farms in Dutchess and Columbia counties formed so small operations don't get bought out or shut down. Strawberries get washed and hulled by hand, ginger gets juiced fresh, lemon zest is grated to order, and every batch of nuts gets toasted separately so a pistachio doesn't taste like whatever was in the pan before it.
The base menu covers the classics, but seasonal flavors are where things get interesting.
