Churchtown Dairy sits on land Peggy Rockefeller bought in the 1980s to keep Columbia County farmland from being sold off for development. After she died in 1996, her daughter Abby built the dairy itself here, breaking ground in 2012 with cows, a creamery, and a mission to prove small-scale, humane dairy farming could still work. The 250-acre farm is certified biodynamic, and the herd (Brown Swiss, Jersey, and Guernsey) grazes on grass and follows its own rhythms; calves stay with their mothers instead of being pulled at birth, a choice that costs milk volume but keeps the herd calmer.
That milk becomes farmstead cheeses made in the on-site creamery, including Peggy, a Camembert-style bloomy rind named for her, plus a fresh lactic cheese and rotating seasonal batches.
