Cosimo's Trattoria & Bar in Poughkeepsie fires twenty wood-fired pizzas with house-made pasta and mozzarella from recipes from Salerno since 1993.
Cosimo DiBrizzi opened his first wood-fired restaurant in 1993, on Route 300 in Newburgh, at a time when a brick oven was still a novelty in the Hudson Valley. Ten years later he brought the kitchen to Poughkeepsie, on Delafield Street, working from recipes of his childhood in Salerno. He died in 2004, a year after opening here, and his children Nicholas and Elisa took over the company and kept it a family business, the way Sunday dinner stayed a fixture at home.
The brick oven up front produces close to twenty pizzas a day, along with garlic bread and flatbreads.
