Gianni Scappin and Lois Freedman opened Cucina in a restored farmhouse at Woodstock's edge in 2006, back when the town lacked an Italian restaurant altogether. Scappin arrived with a strong reputation from Gigi Trattoria in Rhinebeck, carrying the same philosophy here: simple, seasonal cooking built around whatever Hudson Valley farms have in stock that week, with no overcomplication. The menu shifts constantly with what's fresh. Fresh pasta, wood-fired pizza, proteins chosen for what the moment calls for.
