iPho in New Paltz builds broth from charred ginger, star anise, and beef bones simmered clear. The Tran family name half-jokes with iPhone in the title.
The Tran family named this place as a pun before anyone tasted a bowl: iPho, "eye-fo," half a wink at the iPhone and half a description of what's on every table. They'd run Saigon Pho Noodle Bar in Wappingers Falls and owned USA Nail up the street for a decade before taking over the old My Hero Pizzeria storefront on Main Street around 2016, betting a college town could support a second serious pho kitchen.
The broth is the point. Beef bones, charred ginger and onion, star anise, cinnamon, and cloves simmered down until it's clear and deep.
