Chef Eric Donaldson's Baton Rouge cooking at The Parish in New Paltz: gumbo, jambalaya, alligator bites. Patio faces the Shawangunks with live music.
Chef Eric Donaldson runs the kitchen with the cooking he grew up on in Baton Rouge, gumbo, jambalaya, red beans and rice, po'boys, and the occasional plate of alligator bites for anyone who wants the full New Orleans spread. Blackened catfish and shrimp and grits anchor the regular menu, built around locally sourced, all-natural beef and chicken and whatever vegetables are in season. The gumbo and etouffee carry real cayenne heat.
The restaurant sits upstairs in the Water Street Market building, and the patio off the dining room looks straight at the Shawangunk Mountains.
