Underground Coffee & Ales runs breakfast into a beer bar over the course of a single day, and both halves are why the place works. The morning menu includes huevos ahogados (Mexican-style eggs drowned in salsa), smash burgers built around hot honey chicken, breakfast burritos loaded enough to split, and rotating biscuits-and-gravy specials. The coffee comes from Coffee Labs Roasters, the small Tarrytown outfit, pulled to order rather than left sitting in an urn all morning.
By afternoon the ten taps take over the room, and the bottle and can list pushes the full lineup past 100 choices in a given week.
